Abstract: Influence of parameters of thermal processing by manufacture of boiled milk condensed with sugar on formation of large crystals of lactose which reduce quality of a ready product is investigated. Parameters of thermal processing which provide manufacture of qualitative boiled milk condensed with sugar are offered.
