| Abstract: | Цель работы – научно обосновать принципы здорового питания в кафе и оценить потенциал экспорта экологически чистых продуктов из Беларуси в Китай с учётом медицинских, гигиенических и экономических факторов. Проведено анкетирование 420 посетителей кафе (Минск, 2025 г.), изучены фитохимические показатели 30 образцов белорусской продукции, проанализированы логистические издержки и спрос на китайских e-commerce-платформах. Результаты: 78 % опрошенных считают маркировку калорийности «важной»; 65 % готовы платить за «эко»-продукты на 15–20 % дороже; антиоксидантная активность белорусской черники в 1,8 раза выше, чем у голландской (p < 0,05). Выявлены барьеры: срок доставки до Шанхая – 18–22 сут, стоимость холодовой цепи – 0,28 USD/кг/1000 км. Разработано модельное меню «BelEco-Café» с энергетической ценностью 550–650 ккал/порцию, натрием < 0,6 г, клетчаткой > 8 г. Вывод: комплексная стратегия «медицина + кафе + логистика» повышает конкурентоспособность белорусского экспорта и способствует укреплению общественного здоровья |
| Abstract (in another language): | The aim of the study was to scientifically substantiate the principles of healthy eating in cafes and assess the potential for exporting organic products from Belarus to China, taking into account medical, hygienic, and economic factors. A survey of 420 cafe visitors was conducted (Minsk, 2025), the phytochemical properties of 30 samples of Belarusian products were studied, logistics costs and demand on Chinese e-commerce platforms were analyzed. Results: 78 % of respondents consider calorie labeling «important»; 65 % are willing to pay 15–20 % more for «eco» products; the antioxidant activity of Belarusian blueberries is 1.8 times higher than that of Dutch ones (p < 0.05). Barriers were identified: delivery time to Shanghai is 18–22 days, cold chain cost is USD 0.28/kg/1000 km. A model menu for the BelEco-Café has been developed with an energy value of 550–650 kcal/serving, sodium < 0.6 g, and fiber > 8 g. Conclusion: The integrated strategy of «medicine + cafe + logistics» increases the competitiveness of Belarusian exports and promotes public health |
