dc.description.abstractThe data on the state of the soft drinks market of the Republic of Belarus were analyzed. It was found that dried nettle leaves are valuable raw material for the production of functional foods due to the high content of proteins, fiber, polyphenolic compounds and ascorbic acid. The optimal regimes of extraction of dried nettle leaves were revealed. The fermenting beverage compound based on dried nettle leaves was developed. The feasibility of production was considered, profitability is estimated on the level of 19.1%ru
